If you are not aware of a Garlic Scape, it is a "tasty" advantage of growing hardneck garlic. It has become a part of the "foodies" movement in the United States for enhancing many well-known dishes. Professional Chefs around the country have realized scapes add more flavor to exotic and everyday dishes. This culinary delight is available 1 to 2 months before the actual bulbs are harvested. Garlic scapes have a mild flavor that enhances many dishes like soups, salads, and meat dishes. They make a fantastic pesto sauce, and turn your homemade salsa into, "One of a kind!" They can also be used as a garnish when simply chopped. You can refrigerate them for up to a month by keeping them in a closed paper bag. If you need them for a longer period of time, they can be dehydrated or frozen. Make sure to wash them and cut off the ends like you would asparagus or string beans prior to use.
